SERVING SIZE:
2 – 4 people
INGREDIENTS:
BATTER:
- 1 ¼ cups plain flour
- ½ cup caster sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup milk
- 1/3 cup melted Lurpak salted butter
TOPING:
- ½ cup caster sugar
- 2 punnets of Coles Eureka blueberries
- 1 bunch of thyme
TO SERVE:
- Coles vanilla ice-cream
METHOD:
- Preheat fan-forced oven to 180 degrees.
- Grease an oven-proof baking dish.
- Combine dry batter ingredient and mix thoroughly. Add milk and melted butter to the dry ingredients and mix together until just combined.
- Spread mixture into greased oven-proof baking dish. Pour blueberries over the top of the batter. Tear off thyme leaves and sprinkle over blueberries. Pour caster sugar over the top.
- Put dish into fan-forced oven for 35-40 minutes at 180 degrees, or until blueberries are of a jam-like consistency and batter has become golden.
- Remove from oven and scoop vanilla ice-cream over top. Serve warm.
