Honey Ice Cream recipe - The Cooks Pantry

INGREDIENTS :

  • 1 cup Coles full cream milk
  • ¼ cup honey
  • 100gm Coles egg yolks
  • ¼ cup caster sugar
  • 200ml thickened cream

METHOD :

  • In a small saucepan add milk and honey, bring to a light boil over a medium heat, stirring continuously.
  • Meanwhile, in a mixing bowl add egg yolks and sugar and whisk to combine. Slowly pour in ½ of milk mixture and whisk together. Pour back into the saucepan with remaining milk and return to a medium heat. Stir continuously until mixture coats the back of the spoon. Remove from heat, add cream and mix through. Pass mixture through a fine sieve and transfer to an ice bath to cool. Pour into ice cream machine and churn until thickened. Transfer to freezer until required.
