SERVING SIZE:
2 – 4 people
INGREDIENTS:
- 2 cups self raising flour
- 2 rashers bacon, diced
- Chives, chopped
- 1/2 cup milk
- 2 eggs, lightly beaten
- 3/4 cup of grated Extra Tasty Cheese
- 220gm ZoOSh sour cream and chive dip
- 1/4 cup Jalna greek yogurt
- 80gm Lurpak butter melted
METHOD:
- Preheat oven 180℃ Lightly spray a 12 hole muffin tin with oil.
- In a large bowl mix the flour with cheese and chives. In a separate bowl mix eggs, milk, Zoosh sour cream and chive dip, yogurt and butter. slowly add the wet ingredients to the dry . Mix until just combined ( don’t over mix )
- Divide the batter evenly between prepared muffin cups . bake for 20mins or until risen and golden
- Serve warm or cold
