Grilled Feta

INGREDIENTS :
- 1 can of Ardmona Tomato Puree
- 1 small brown onion, diced
- 1 block of Coles danish feta
- 1 garlic clove, diced
- 1 tsp chilli flakes
- 2 tsp dried oregano
- 4 sprigs fresh parsley
- 2 pinches of sea salt
- Cobram Estate Extra Virgin Olive Oil Classic Flavour
- 1 fresh baguette
METHOD :
- In a pan heat olive oil and add onion and 1 pinch of salt on a medium heat, stirring often to avoid it becoming coloured. Add garlic and cook until translucent. Add chilli, 1 tsp of oregano, remaining salt and tomato and stir through, cook for 2-3 minutes.
- In a baking dish add the feta and pour tomato mixture over the top and sprinkle with remaining oregano and a drizzle of oil. Fan Grill at 200C for 20 minutes.
- 5 minutes before serving place the baguette in the oven to warm.
- Before serving, mash the feta and mix through.
