Grilled Feta recipe - The Cooks Pantry

INGREDIENTS :

  • 1 can of Ardmona Tomato Puree
  • 1 small brown onion, diced
  • 1 block of Coles danish feta
  • 1 garlic clove, diced
  • 1 tsp chilli flakes
  • 2 tsp dried oregano
  • 4 sprigs fresh parsley
  • 2 pinches of sea salt
  • Cobram Estate Extra Virgin Olive Oil Classic Flavour
  • 1 fresh baguette

METHOD :

  • In a pan heat olive oil and add onion and 1 pinch of salt on a medium heat, stirring often to avoid it becoming coloured. Add garlic and cook until translucent. Add chilli, 1 tsp of oregano, remaining salt and tomato and stir through, cook for 2-3 minutes.
  • In a baking dish add the feta and pour tomato mixture over the top and sprinkle with remaining oregano and a drizzle of oil. Fan Grill at 200C for 20 minutes.
  • 5 minutes before serving place the baguette in the oven to warm.
  • Before serving, mash the feta and mix through.
