SERVING SIZE:

2 – 4 people

INGREDIENTS:

  • 1 cup Coles White Grain Quinoa 
  • 2 cups water
  • 1 brown onion, diced
  • 1 Red capsicum, deseeded and diced
  • 1 green capsicum, deseeded and diced
  • 1 tin corn or fresh corn
  • 1 tin black beans 
  • 1 head broccoli 
  • 1 tin chopped tomatoes
  • Massel Chicken stock
  • 2 limes
  • 2 tsp Ground cumin, or to preferred taste
  • 1 tsp Ground coriander 
  • 1 tsp Sweet paprika 
  • 1 tsp Dried oregano
  • Fresh coriander 
  • Salt and Pepper
  • Fresh spinach/avo to serve

 

METHOD:

  • In a large frypan, place all ingredients. Mix together. Turn on heat and stir. Place a lid over the pan to cook through the quinoa. Cook for approximately 10 minutes, add water if necessary.
  • Garnish with fresh coriander, spinach and avocado to serve.
