SERVING SIZE:
2 – 4 people
INGREDIENTS:
- 1 cup Coles White Grain Quinoa
- 2 cups water
- 1 brown onion, diced
- 1 Red capsicum, deseeded and diced
- 1 green capsicum, deseeded and diced
- 1 tin corn or fresh corn
- 1 tin black beans
- 1 head broccoli
- 1 tin chopped tomatoes
- Massel Chicken stock
- 2 limes
- 2 tsp Ground cumin, or to preferred taste
- 1 tsp Ground coriander
- 1 tsp Sweet paprika
- 1 tsp Dried oregano
- Fresh coriander
- Salt and Pepper
- Fresh spinach/avo to serve
METHOD:
- In a large frypan, place all ingredients. Mix together. Turn on heat and stir. Place a lid over the pan to cook through the quinoa. Cook for approximately 10 minutes, add water if necessary.
- Garnish with fresh coriander, spinach and avocado to serve.
