Rotisserie Chicken

INGREDIENTS :
- 1 packet Little Lucifer Ready-To-Use Smoking Wood Chips Savoury Herb
- 1 Coles Whole Chicken
- Salt (enough to evenly cover the surface of the chicken)
- Oil (enough to evenly cover the surface of the chicken)
- 150g Persian feta
- 50g Almonds
- 1 Cucumber, thinly sliced
- 6 radishes, thinly sliced
- 1 cheek of a lemon juice
- 2 tbsp of Cobram Estate Light Extra Virgin Olive Oil
- 1 bunch of tarragon
Specialty Equipment: 1 x Rotisserie BBQ
METHOD :
- Coat your chicken evenly in oil and salt and pierce the chicken on the rotisserie skewer, making sure the weight is evenly distributed and secure. Pierce the foil of the Little Lucifer Smoking Wood Chips and place on top of your coals. Insert the Skewer into your rotisserie and begin rotating. Cook for approx. 1.5 hours (time may change depending on the size of the chicken).
- Combine in a bowl, cucumber, radishes, lemon, olive oil and salt. Toss to combine and serve on plate. Dress with almonds and feta.
